The Story of This Beloved, Delicate Dessert As with many things throughout human history, there is constant debate about where a particular dish or invention originated. Cheesecake—the cheese pie—is no exception. According to some accounts, it was a dessert enjoyed by the ancient Greeks, who served it to their wedding guests and to Olympic athletes so they could build up their strength before competitions. The Romans, in turn, borrowed the recipe for this pie from the Greeks. It is said that Julius Caesar was especially fond of cheesecake, and as a result, it became a staple in the homes of wealthy Romans. From Rome, the dessert’s popularity spread throughout the Roman colonies, including England. Another theory holds that cheesecake originated in the Middle East and that the recipe made its way to Europe along with other spoils brought back from the Crusades. In any case, the hero of our story eventually made his way to America with the settlers. That’s where its most important transformation took place. The cheesecake we know and love today was created by William Lawrence of Chester, New York, and Arnold Reuben, the owner of the legendary Turf restaurant. In 1872, William Lawrence invented the key ingredient in modern cheesecake: cream cheese. As often happens, it was completely accidental. William was simply trying to recreate the French cheese Neufchâtel. Then, in 1929, Arnold Reuben decided to use this cream cheese in a cheesecake. He tasted it and was amazed. His customers tried it next, and the story began… The fact is that cheesecake is a wonderful dessert for those who have chosen a low-carb lifestyle.
