“One week before Christmas.” This unique line is a quote from my favorite Christmas movie, “Love, Actually.” Literally every year since it came out, it manages to catch my attention in one way or another. Everyone has their own obsession; this is mine. Maybe it’s because the festive feeling is so overwhelming in its naturalness. Maybe it’s because it’s a colorful mosaic of intertwined, very human stories, but I still can’t get enough of it. So now I’m playing the movie’s soundtrack to set the mood, and I’m starting my own pre-Christmas challenge. This Christmas, I’ve decided to spend a few days in a row trying out and sharing recipes for cookies and Christmas treats.

  • 120 g Keto Sweetener (Powdered)

Steps
  1. Grind the cleaned walnut kernels using a blender.
  2. In a metal bowl, mix half of the walnuts, the egg whites, the sweetener, and the vanilla.
  3. Place the metal bowl over a pot of water to cook in a double boiler (bain-marie). The water should not touch the bottom of the bowl.
  4. Stir the mixture over the double boiler at a moderate temperature, so the egg whites don't curdle, until a homogeneous, sticky, light creamy mixture is achieved.
  5. Add the other half of the walnuts and stir well again.
  6. Remove the mixture from the heat and add a few drops of lemon juice and one tablespoon of coconut flour.
  7. Using a spoon, shape the walnut cookies and arrange them on a baking tray lined with parchment paper.
  8. Bake in a preheated oven at 160°C (320°F) for 15-20 minutes, or until done.
