Panna Cotta with Pumpkin
I had an opened can of coconut cream left in my refrigerator, so I decided to make a jellied dessert: pumpkin panna cotta. Panna cotta is a delicate Italian pudding from the northern part of the Apennine Peninsula, more specifically from the Piedmont region. In Italian, *panna cotta* means “cooked cream.” Many details about the dessert’s origins have been lost, but we do know that the earliest versions of panna cotta contained whipped cream, fish collagen—essentially bone broth—honey, and, of course, vanilla, which was added to create a distinctive flavor. After being cooked, the panna cotta was chilled and served with fruit and a glass of wine. Over time, this delicate dessert became popular throughout Italy and then around the world. Today, there are many different variations, including chocolate and coffee panna cotta. Panna cotta is especially suitable for people following a keto or low-carb diet because it contains a generous amount of healthy fats and very few—if any—carbohydrates. To achieve the classic texture and appearance of this dessert, it’s helpful to follow a few recommendations from Italian chefs: First, remember that the pudding should be soft rather than rubbery. Otherwise, it won’t be any different from ordinary gelatin dessert. This means that the gelatin should be used in moderation. It’s not recommended to let the cream boil, as this can negatively affect the flavor. Italian chefs recommend adding the dissolved gelatin to the cream after it has been heated. Traditional panna cotta is made with dairy cream, and heavy cream with a fat content of 30% or higher works best. However, if you choose to use coconut cream, the result will also be delicious.
